You need

Method
  • 1 Separate eggs into two clean bowls. Whisk yolks with vanilla powder until smooth.
  • 2 Beat egg whites with hand mixer on high, slowly adding allulose as you go, until stiff fluffy peaks form.
  • 3 Gently fold fluffy whites into yolk mixture — keep as much air as possible.
  • 4 Heat dry skillet over medium-low. Spoon batter into mounds. Cover with lid 3 min. Flip gently. Cook 2 min more.
  • Serve Drizzle allulose syrup over the top. Eat immediately — soufflé pancakes deflate fast.

Method

You need

Method to Test
  • Prep Spray silicone mold generously with avocado oil. Crack eggs into a separate vessel, add salt, whisk gently with a fork just until combined.
    Fork only — no immersion blender. Less air = eggs won't lift in the fan.
  • Seal Pour egg mixture into mold. Cover tightly with heavy-duty foil, crimp edges firmly around the rim. This shields against the 3600 RPM wind tunnel.
  • Phase 1 Place sealed mold in basket. Bake 300°F · 2 minutes only.
    2 min not 6 — 6 minutes sealed makes a casserole/frittata, not a scramble. We want edges just barely starting to set.
  • Phase 2 Remove foil. Stir from edges inward with silicone spatula. Return uncovered. Bake 300°F · 90 seconds. Pull, stir. Repeat until eggs look just underdone and glossy.
    Residual heat finishes them. Remove while still slightly wet — they keep cooking off the heat.
The enemy is the fan, not the heat. Foil shield solves wind tunnel for Phase 1. Short seal (2 min not 6) keeps it scramble not casserole. Hybrid method — not yet tested. First run will tell us everything. 🍳

Method
  • 1 Crack 6 eggs into a mixing bowl. Add salt and whisk vigorously until completely smooth. Add cooked ground beef and stir until every bit of meat is completely coated.
  • 2 Grease inside walls of 6-inch silicone mold with oil. Pour beef and egg mixture straight in.
  • 3 Do NOT preheat TurboBlaze. Do NOT cover mold with foil. Place mold directly on metal rack inside basket. Bake · 320°F · 18–22 min.
  • 4 At 18 min — gently tap the basket. Outer edges should look set, matte, and opaque. Absolute center should still wobble like warm gelatin. Pull immediately at this marker.
    Emergency fix if top cooks too fast and inside stays soupy: scramble mixture vigorously with a fork right inside the mold, then Air Fry uncovered at 380°F · 4–5 min to set instantly.
6 eggs minimum — 460g of meat needs the full liquid volume to stay moist and spongy. Don't drop to 4. No preheat, no foil. The wobble is the signal. 🍳🖤

French Toast — Half & Half Version (C)

Method
  • 1 Crack egg into a shallow wide bowl. Add half-and-half, monk fruit, salt, and cinnamon if using. Whisk vigorously with a fork 30 seconds until completely unified, smooth, and slightly frothy.
  • 2 Place egg loaf slices flat into custard. Soak exactly 20–30 seconds — half-and-half is thinner than cream so it absorbs fast. Flip, soak other side 20 seconds.
    Watch it — don't let it oversaturate.
  • 3 Pan over medium heat. Add butter, let melt until it foams and sizzles. Lay soaked slices straight into hot foaming butter.
  • 4 Fry undisturbed 2–3 min first side until deep golden-brown crust forms. Flip. Fry 2 min until it mirrors the same color and toast puffs slightly.
  • Serve Plate immediately while sizzling hot. Top with a slice of cold grass-fed butter right over the hot crust for that temperature contrast. 🖤

  • 4 Pan fry on medium-low heat. Cover with a baking sheet. 5 min each side.
Gelatin goes in halfway through whipping the whites — not at the start. The cover traps steam and cooks the inside gently. 🥞🖤

Frozen Glass-Crisp Bacon

Method
  • Prep Do not preheat. Line basket with heavy-duty foil to catch grease. Place elevated wire rack on top. Lay frozen bacon strips directly onto rack — stuck together is fine.
  • Phase 1 350°F · 3 min. Open basket — strips will have thawed. Use tongs to separate and lay completely flat in a single layer.
  • Phase 2 350°F · 7–10 min. Grease renders and drops through the rack onto foil below.
  • Phase 3 Switch to Broil (or 420°F+) · exactly 1 min until fat stops bubbling and turns dark golden-brown.
  • Blot Transfer immediately to plate lined with 3 layers of paper towels. Aggressively blot both sides. Discard all grease from foil.

  • Phase 2 Pull basket. Firmly press paper towel over both sides until bone-dry. Season both sides heavily with Redmond salt. Insert probe directly into absolute center of the thickest part.
  • Phase 3 Slide basket back in. Air Fry · 400°F. Watch probe closely — the exact second center hits 108°F, move immediately to Phase 4.
  • Phase 4 Without removing steak — switch to Broil. Blast until probe reads exactly 122°F. Flip once halfway to build an even sizzling brown crust on both sides.
  • Rest Pull steak and place on plate. Drizzle olive oil over the top. Rest untouched 5 min — internal temp coasts to 135°F medium-rare.
First cooked June 2026 — West Palm Beach. Full. Happy. Satisfied. No pain. The probe is everything — move at 108°F, pull at 122°F. 🥩🖤

Part 2 — Reheat & Finish

  • Assemble · 1 min Transfer to a broiler-safe dish (or keep in oven-safe skillet). Scatter crispy toasted ham ribbons evenly over the top. Lay 3–4 slices Swiss cheese flat over everything.
  • Broil · 1–2 min Broil on HIGH top rack 1–2 min until Swiss slices turn glossy, bubbly, and completely melted. Watch it — it goes fast.

Phase 1 — The Sear
  • 1 Pat chicken completely dry. Season both sides generously with salt and pepper.
  • 2 Dust lightly with egg white powder just before going into the pan.
  • 3 Heat 2 tbsp avocado oil in large skillet over medium-high. Fry in 2–3 rounds — don't crowd the pan. Sear 2–3 min per side until golden. Center should still be slightly pink (80% cooked).
  • 4 As each piece comes out, brush immediately with melted butter. Place on resting plate, wrap tightly in foil, keep on counter.
Phase 2 — The Sauce Base
  • 1 Turn heat to medium-low. Add 2 tbsp butter to empty skillet with drippings. Let foam.
  • 2 Drop in garlic. Stir constantly 30 seconds until intensely fragrant. Do not brown.
  • 3 Pour in lemon juice and chicken broth immediately. Scrape up all browned bits. Turn to medium, boil 4–5 min until reduced by half.
  • 4 Turn heat down. Stir in 3 tbsp capers and lemon zest. Simmer 30 seconds.
Phase 3 — Thicken & Hold
  • 1 Pour in 1½ cups heavy cream. Stir and bring to a gentle simmer over medium heat.
  • 2 Simmer uncovered 5–6 min, stirring occasionally until reduced by ⅓ and coats the back of a spoon cleanly.
  • 3 Turn stove off. Cover with lid or foil. Rest on cool burner 1–1.5 hours until dinner.
Phase 4 — Reheat & Finish
  • 1 Warm sauce on medium-low 2–3 min. Pour in any juices pooled on chicken resting plate. Splash in 1–2 tbsp broth if sauce looks too thick.
  • 2 Nestle all 6 chicken breasts into warm sauce. Simmer gently 3–4 min until 100% cooked through and piping hot.
  • 3 Final 60 seconds — stir in remaining 3 tbsp capers. Hot but still crisp and briny.
